I had that problem with the guage in my EL, it would rise suddenly, then drop just as suddenly. It was the sender. Replaced it and hasn't played up since.

I also think its the Oil pressure sender unit, but could be a stuck pressure relief valve but not likely.

replace the sender, that will fix the prob for sure.
